Mix up your lunch and dinners

Let’s inspire meal times. Especially when there’s limited motivation or time to research new recipes and cook.

At one time or another, we’ve all had to settle with toast for lunch or dinner because we weren’t prepared enough.

We want to help you with some scrummy ideas for your lunch and dinners that are easy, convenient and affordable.

So if you’re struggling with inspiration read on.



Easy, delicious and healthy.

Cucumber Sushi for the lunch box.


  • 1 telegraph cucumber

  • 1 red capsicum, finely sliced

  • 1 avocado, finely sliced

  • 1/2 cup cooked sushi rice

  • Soy sauce, to serve (optional)


  1. Cut cucumber into four pieces. Using an apple corer, hollow out the centres to remove the seeds.

  2. Add a few slices of capsicum and avocado into the cavity to fill half of it.

  3. Add the rice into the other side of the cavity and press to compact it until completely filled.

  4. Cut into 2cm sushi slices. Serve with soy sauce, if desired.

  5. Fresh Tip: You can also use any fresh veges you like for the filling.

Chicken and noodle lettuce cups for a quick and healthy dinner.


  • fresh produce vermicelli, 250g

  • 2 tsp vegetable or peanut oil

  • 1 spring onion, finely chopped

  • 3 celery sticks, finely chopped

  • 1 long red chilli, seeded, finely chopped

  • 3 tsp finely grated fresh ginger

  • 500g chicken mince

  • 250g green beans, trimmed, cut into 3cm lengths

  • 1 ½ Tbsp lemon or lime juice

  • 1 ½ Tbsp fish sauce

  • 2 tsp brown sugar

  • 12 iceberg lettuce leaves

  • Coriander leaves, to garnish


  1. Soak noodles in a large heatproof bowl of boiling water for 5 minutes. Stir to separate strands, then drain. Using kitchen scissors, snip into shorter lengths.

  2. Meanwhile, heat a wok or large frying pan over a high heat. Add oil and swirl to coat the surface. Add spring onion and celery, and stir-fry for 2 minutes or until golden. Add chilli and ginger, and stir-fry for 1 minute more.

  3. Add mince and cook for 5 minutes or until browned. Add beans and stir-fry for 2 minutes or until beans are tender. Add lemon or lime juice, fish sauce and sugar, and stir-fry for 1-2 minutes or until combined. Stir in noodles.

  4. Place lettuce cups on plates. Fill with chicken mixture. Sprinkle with coriander and serve.

  5. Tip: You can replace chicken mince with pork mince.

Convenient (and healthy)

When looking for lunch options on the go it’s nice to know there are options out there that are healthy.

When you’re wanting affordable meals, look at recipes without meat. You may think a meal without meat is boring but you’ll be surprised at how a veggie meal can be just as delicious. For instance, check out this veggie curry recipe from Countdown.

Red lentil, mushroom and spinach curry.


  • 1 cup dried red lentils

  • 4 naan bread

  • 1 tbsp vegetable oil

  • 1 tsp cumin seeds

  • 1 small brown onion, sliced thinly

  • 2 clove garlic, crushed

  • 1 tbsp grated fresh ginger

  • 2 small green chillies, sliced thinly

  • 200g baby button mushrooms, halved

  • 1 1/2 cups vegetable stock

  • 1/2 tsp garam masala

  • 250g baby spinach leaves

  • 1 cup natural yoghurt

  • 1/2 tsp salt


  1. Preheat oven to 180°C/160°C fan-forced. Wash lentils thoroughly under running water to remove any dirt or stones. Wrap naan bread in foil; heat in moderate oven about 10 minutes or until heated through.

  2. In wok or large frying pan, heat oil. Add seeds, stir-fry until fragrant. Add onion, garlic, ginger and chilli; stir-fry until onion is soft. Add mushrooms, stir-fry until browned lightly.

  3. Add drained lentils, stock and 1/2 a cup of water; bring to the boil. Reduce heat, simmer, uncovered, about 5 minutes or until lentils are tender. Meanwhile, make yoghurt sauce.

  4. Add garam masala and spinach to curry, stir until spinach is wilted; transfer to a serving dish.

  5. For the Yoghurt sauce, combine yoghurt, salt and 1 clove of garlic.

  6. Serve with warmed naan and yoghurt sauce.
